I'm getting pretty annoyed with iOS 5 on my iPhone 4 and iPad 2 and have exhausted a lot of options and still no resolve.

Basically, I am having issues with both my iPhone 4 and iPad 2 not syncing with iTunes correctly.

For example, whenever I try to sync a video to my iPad, if the video is 800mb, iTunes will show that its syncing "4.9GB" of video. Since my iPad is 16GB, if I select a few movies, I'm over the limit and it won't sync. iTunes shows that my iPad is full, but my iPad shows I have 10GB free. It won't do this on my iPhone. On the iPhone, it won't let me sync TV shows. All bought from iTunes store. Gives me some BS error about failed to sync X number of items.

I've deleted the iCloud backups of both devices, wiped both devices and restored them both. Same crap.

Any ideas on what is going on here? And will a Genius appointment help me out?

Yes.

Is your copy of itunes on a laptop? If so you can easily bring all that in for them to work on. Even seen people bring in a tower...

I would recommend changing your settings to manual, delete the videos off your iPad and transfer one video at a time. And yes, you can make an appointment.

Yea, my iTunes library is on my laptop. I actually manage my music and videos manually, but I did delete all videos off my devices and tried adding them one by one, still not working.

I'm hoping its not an issue with my library. I'll just make the appointment and see what they say.
