So my question is:
Can I make Siri to only listen to "hey Siri" on just on device? For instance, if I use "Hey Siri"on my apple watch, Siri on my iPhone responds as well, even if the phone is in my pocket. I don't understand why they are not synchronised. Usually they respond with different answers.. It's annoying.

It seems very random times for me. I mean, which device responds ultimately.
Yeah, it somewhat is.

The device that responds is the one that heard you best or was recently raised or used.
Which really comes dow to... If the last or most used device is anywhere near, that device will respond even if another is nearer. Also, from my experience — perhaps related to the former — the iPhone takes precedence over a watch unless it is out of BT range.
