Yes. Your MacBook Pro is able to run Windows Vista 64-bit.
However, I would stick with 32-bit. The difference is with the RAM- a 64-bit OS will take advantage of 3.2+ GB of RAM, while the 32-bit OS will only use up to ~3.2 GB.
Since you've only got 2 GB, there's no need to have a 64-bit operating system.
And looking at Vista 64-bit's driver issues, it's a better choice to stick with 32-bit Vista.

I'd actually recommend using 64 bit Vista. Someone I know with it hasn't had any driver problems with his. The driver situation seems a lot better with 64 bit Vista than it was for 64 bit XP. And, if you do upgrade to 4GB you'll be able to immediately use it all.
I'll add the disclaimer that I use XP for gaming, not Vista. I bought a Mac to get away from Vista, so installing Vista on it seemed to contradict my reasoning for having a Mac.

Do note that your MacBook restore disc only includes drivers for the 32-bit version of Windows Vista. The 64-bit drivers ship only on the Mac Pro and MacBook Pro restore discs.
So you will need to download the 64-bit Boot Camp drivers from the web from a third-party site (since Apple does not make them available for download).
And you cannot use the BootCamp 2.1 update drivers by themselves. Those only work after you have installed the Boot Camp 2.0 drivers included on the system restore discs.

Apple only supports Vista64 on 2008 MacBook Pro and MacPro models.
The MacBook with integrated graphics and 2 gig of ram is not going to benefit from Vista 64.

That may have been true when it was released but is not true now. Vista 64bit is a great choice especially if you are likely to upgrade your RAM in the future.
As others have said, yes! And you should. If you can afford it, get the 4 GB of RAM. RAM is very cheap right now (we have the same Mac pretty much). Been using Vista 64 since February (for gaming, etc.) and it's been awesome.

So let me get this straight; I have been thinking about installing Vista 64bit for gaming and general purpose on my iMac 64bit with 4GB RAM from this year(June). I am not able to use the drivers included on my Leopard Restore Discs that came with the iMac for 64bit Vista?

Correct. Only the 2008 Mac Pro and MacBook Pro restore CDs include Vista x64 drivers. All other Mac restore CDs (that have Vista drivers) include Vista x32 drivers.
With a bit of searching on the web, you can find the Mac Pro / MacBook Pro Boot Camp driver installation package for Vista x64, so you can install it on your iMac with that package.
