I have a 5S I want to trade in for a 6S or SE but I'd like to save Safari bookmarks and my Notes.

I'm not interested in a backup because I want to start fresh on my new phone.

All I want to save to my iCloud which I've never used before is my Safari bookmarks and Notes. I selected both of them and the slidebar for both are now green.

Are they now in my iCloud or do I have to create a "backup" or something? Like I said, I just want my bookmarks and Notes.
 
All that does is sync your Safari bookmarks and notes not back them up. Making regular backups of your Mac will ensure your Safari bookmarks and notes are likewise backed up.

So let's say I log out of my Apple ID right now on my 5S. Then I sell my 5S and buy a 6S.. I get a new SIM card and then set up the 6S. Then log into my Apple ID.

Would just logging in to my Apple ID on the new phone "sync" my Notes and bookmarks?
