You can boot from the disk and format the new hard drive, but you cannot install from it. You can only use a 2011 Macbook Pro dvd or a Lion USB Recovery Disc. If you updated to the new EFI on the Macbook Pro, try holding down Command-R at boot to start the Lion Internet Recovery.

The Lion Internet Recovery is used in the event one's hard drive has been replaced. It loads a fresh install of Lion, nothing else.
