My Mac Pro 2009 flashed to 5.1 has a Nvidia GTX680 GPU. I don't know if it's a genuine Mac version - can I tell on System Info?

Will I be able to run High Sierra as it is or do I have to do anything else first? Will I encounter any problems if I start it up with a SSD boot internal disc from my 2010 Mac Pro which runs High Sierra?

Yes, Mac Edition and flashed cards have specific ROM Revision, look on SystemInformation, at Graphics/Displays:

Real Mac Edition or compatible cards flashed with Mac Edition firmware:
Code:
ROM Revision: 3731

MacVidCards flashed GPUs:
Code:
ROM Revision: MacVidCards

Will I be able to run High Sierra as it is or do I have to do anything else first?
Yes, even with a PC version - un-flashed.

Will I encounter any problems if I start it up with a SSD boot internal disc from my 2010 Mac Pro which runs High Sierra?
No, but un-flashed cards don't have pre-boot configuration support.

Thanks! My GPU says ROM Revision: 3731. So I can go ahead and try out High Sierra with no problems?

Thanks! You're way ahead of me in technical knowledge, much appreciated.

I suppose the next thing to look at is whether it will run Mojave but I imagine this gets complicated and requires code etc etc.

Just follow the instructions here:

You have one of the Mojave supported cards.
