The special "Messages" (blue) that are sent between iOS (and Mac) users are supposed to be encrypted end-to-end, the way I understand it. That should mean a hacker would have to beat the encryption or hack the account itself.

SMS messages (green) don't have any special hack-proofing security when they're traveling through the air...I think.

Aren't many things that we do on our devices or even in life basically things we don't want someone else to see. Like just personal communication, or banking, or all kinds of other normal everyday things, yet things that are still basically private or just limited to those specifically participating in them.
