I'm seriously thinking about getting a new M1 mini. However I must have dual displays and a Youtube video I just watched made me pause. The person making the video said he could not get his M1 mini to output video to 2 HDMI monitors. I know there is only 1 HDMI port on the mini and that will work fine for one monitor. But I need that 2nd monitor to also be HDMi which will mean a USB-C to HDMI adapter. Is anyone running their M1 mini this way?

2 HDMI should not be a problem at all. I have 2 HDMI monitors on my M1 Mac mini, one directly into the HDMI port and another on Apple's USB-C Digital AV Multiport Adapter: https://www.apple.com/shop/product/MUF82AM/A/usb-c-digital-av-multiport-adapter

It's 3 or more monitors on the Mini that things start becoming garbage.

It sounds like he was using a dock. He didn't link to it either. I am almost 100% confident it's because of the dock. Just stick to something simple and it should be fine.
