I've been trying to find out if an M1 Pro 10/16 can run two 4K/144hz displays (on separate cables, I'm not talking about one cable) or if I need to upgrade to M1 Max to achieve this setup.

I couldn't find the answer on either Apple's website or by googling.

Should be able to, but I haven't noticed whether anyone has tried it. People have been running one 4K @144Hz from one port, so using two ports should do it. It's about the same number of pixel refreshes as with 6K @60Hz monitors, maybe a little more.

I have run 4k@120 & 3440x1440@144 at the same time with no issue. Not quite the same as you are seeking but pretty close. I actually game on the ultra wide with both connected with no issue.

For the people in the future looking for the answer to @jnofi question:
I have the MacBook Pro 16'' 2021, M1 Max, 24-core GPU with 32GB of RAM.
I use 2x Unitek V1146A cables (Thunderbolt -> DisplayPort).
One is connected to LG 27GN950, and the other to LG 27GP950.
Im getting smooth 4k (scaled to 2560x1440) at 144hz on both of them. Additionally I have the MacBooks display also open with ProMotion (120hz) enabled.
This is absolutely amazing 🤯
