Mac user for years and currently on 14" M1 MacBook Pro but have always used SoftRAID for externals.

Now looking to use an external in JBOD mode but wondering/hoping that Disk Utility would be able to create a single volume from 2-3 SSDs.

If it can, is it also possible to later grow the volume by adding another SSD without risk for data loss?

I've never actually done this myself, but had contemplated doing it at one time. See this link and the ones at the bottom of the article.

Unfortunately it cautions this:
Important: When you add a disk to a disk set, all the original files on the added disk are erased. Be sure to back up any important files on the disk before you add it to a set.
