Just got an M1 MacBook Air and loving it. Trying to switch to safari and while its not the best for extensions etc I have been ok with it. However a feature I desperately need for work etc is the ability like chrome / edge is to save a website as a standalone application.

This way when I close the browser I do not close all my open programs. I use specific sites for real time data and I Do not want to worry about closing out my sites by accident.

Is there a way to do this?

You are describing a "Progressive Web App" (PWA), I am developing one myself. This is supported by Safari on iOS, but AFAIK, not on MacOS. Actually, I didn't realize that it was possible to install a PWA on the Mac with Chrome and Edge, but now I see that it is - thanks for pointing that out. Very cool. :)

Yes it's a game-changer I think there used to be some apps to make this happen in OSX FLUID I believe but as far as I know, all are gone now. I need a solution or I will just have to use Chrome or Edge

Pinned tabs are cool but not what I need having to constantly login
