Can you take screens of where these buttons all are? Like I said for some reason I must hit the wrong things because when I restore (update) it creates a new backup that is clean.
From what is sounds like is your computer either doesn't have any of your stuff or it's not authorized.
On the top menu bar depending on if your have a Mac (it's on the top of the screen) or if you have Windows, (it's the top most line File | Edit| View, etc. [press Alt on your keyboard if you don't see it]): View—>Show Sidebar; plug your phone in if you have not already. Now go to Store—>Authorize this computer…; this will let your computer download and update your apps and music.
Next on the left hand sidebar you will see your phone. Right click on it and there is an option to 'Transfer Purchases.' Do this and it will transfer all your apps, music, videos, whatever you bought on iTunes or the App Store. It however does not backup your music if you did not buy it from Apple. If you got your music another way, you need to manually add it to iTunes.
In the same side bar, left click on your phone to select it and you will see it in the main window. The there are three sections: Status, Backups, Options. In the middle section choose the checkbox that says 'Encrypt iPhone backup' and choose a good password. You can save it to your computer if you want. The reason to encrypt is (1) people don't see your backup without your password, and (2) it saves all your passwords like for email accounts. If you were not encrypting before it should start backing up your phone again. You can let this finish. Just to be safe after this process is done hit the big button in the middle that says 'Back Up Now.'
Now that you're backed up you need to disable 'Find My iPhone.' This option is in Settings—>iCloud—>Find My iPhone. If the toggle switch is green you need to click it (it will ask your iCloud password [not the backup password you created earlier]); if it's not green, you are done (don't enable it yet).
On the top section in the status section, there is a thumbnail of your device, your phone's name, charge status, capacity, etc. on the right side of that you see two big buttons, click the right most one that reads 'Restore iPhone…'
Go through all the steps, and when it ask if you want to back up your phone, select 'Do Not Back Up' and continue. This process may take a while depending on if you have already downloaded iOS 7.1.2 before or not and how fast your Internet connection is. Have some patience.
After this process is completed you will have a blank phone. It will ask you to restore. You choose one of the options that says to 'Restore from my computer' and choose the backup we did earlier. If you chose a password and didn't save it on your computer, it will ask you to input it here. If it's wrong the process will start and then say the password is wrong. It does not tell your the password is wrong immediately if it is.
Wait for the process to complete, including the sync process that installs your apps and stuff.
Now when this is all done and you've gone through all the processes on your phone and you can see the home screen, you are ready to jailbreak.
