With all the problems on pre 8 devices, can one stay on 10.3.3 as long as they want and keep refusing to update or at some point do you have to update forced?

You can stay as long as you wont, just refuse do update or, even, better, you can install tvOS beta profile 
You can stay on it for as long as you want, but longer you do, more insecure your device becomes. Your phone will not be receiving this KRACK WiFi fix that is in iOS 11. And thats just one vulnerability.
People always come to forums to complain, you don't see people coming to forums to praise. People like to make a show. I have an Air 2 running iOS 11.0.3 and its almost flawless. No lag, no stutter, no crashing. For every 1 person that complains on MacRumors, there probably 10,000 in the public that aren't complaining. Just keep that in mind.

Does iTunes still ask you to update after you restore the phone or say after you unlock it?
Happened to me with iPhone 4 on AT&T. I wanted it on iOS4 forever even though certain apps no longer worked. Then I was forced to restore and update to iOS6 after having it unlocked.
Luckily, I got my iPhone SE (AT&T GoPhone) unlocked at a cell phone repair shop only waiting within a day to pop in my T-Mobile sim and didn't need to restore and update it.
For years and years now, you have never needed to restore your phone after unlocking it. AT&T always said you had to and still says you have to, but you don't really.
In that scenario, yes you will be forced to update because you are restoring your software to a version that is no longer available or being signed by Apple. So you only have one option, update.

Yes, if you try to restore, you will not be able to re-install 10.xx.
Also, if you get a newer Apple Watch you will not be able to attach it to a phone with 10.xx.
Other than that, you should be fine running 10 for quite a while, if you ignore the possible security issues.

But like others have said, you can stay on iOS 10 as long as you want. You won't be forced to update.
Glad I got mine unlocked at a cell repair shop then. Cost me $95 because it was guaranteed unlike the other one that couldn't do it for me for only $40 and suggested to restore it.
I have bad experiences updating all my phones in multiple platforms whether it ran slower, far worse battery life even after a restore to new, camera getting worse, etc
My MacBook Air is still on El Capitan. I look at it as if "it ain't broke, don't fix it." It's why Macs last longer and don't slow down. Laptops have longer cycles and nobody is pressuring you to update.
I get all that with security patches and such. But I find the best firmware is the one they came with. That's what it was built for. Most of Apple's revenue is iPhone. They want to sell as much as they can every 1-2 years.
It was Apple who changed the mobile industry but also ruined it a bit acting like cancer. Go back to iPod. No expandable storage. No removable battery. Then iPhone offered the same.
After two to three years with your iPhone, gotta get the new iPhone because battery isn't what it was or running out of storage and no microSD slot. No different than iPod.
Google Photos has helped me from adding and subtracting files as writing on flash memory over and over will slow it down. And better not to keep all your eggs in one basket. Prevents from restoring too with all the gunk.
We all have to bend over backwards with Apple's rules which is why I left iOS for awhile. These companies have hoodwinked us for years since the light bulb. Expiration dates on them like milk cartons.
Planned obsolescence is evil.

I’m on a 6s and love 11.1. I have a hiccup here and there, but I’m a grown up and realize no software is 100% bug free.
What device you have, because yes older models sometimes do have some negatives running newer versions. This of course is a natural evolution of computer technology(not planned obsolescence BTW). Imagine if iPhone X only had features which 5S or SE could also run, not a very exciting product.
As many have said you can stay on 10.x, but you’ll likely miss out on updates to your most used apps sooner than later and all important security fixes.
I’ve always upgraded to the latest iOS release and have never, once regretted it.
This is not true. Apple will release as the have in the past suplimentary updates for things like this!

I probably would still have my Google Pixel right now if I didn't update to Oreo which degraded my battery life and if the PiP feature didn't annoy me so much while using Google Maps.
I don't even update my apps on both platforms. To me, software updates is just another talking sales point for mobiles. On desktops, people used Windows XP for over a decade and were perfectly content with it.

Not so sure. Unlike iOS 11 there’s no reason to wait if they have a KRACK update and there’s no indication I’ve seen that one is coming. Personally, I think Apple should feel compelled to in this case.
This is not true. There has not been a single supplemental update to iOS 7/8/9 for security flaws.
iOS 9.3.5 has been the same since iOS 10 was released. There have been dozens of security fixes in iOS 10 that iOS 9 users have not received.
Same goes for iOS 8.4.1.
Only real problem with 11 is battery life on iPhones, hopefully that will be fixed with 11.1. Control centre toggles are another annoyance, though not as big an issue as the battery drain. You can stay on 10 as long as you want, but bear in mind you won;t be receiving the in-built security fixes that most iOS updates bring...
