I've gotten differing opinions on this; I spoke with an apple tech rep who said it might be possible for a store to upgrade an SSD, and I've read online in a few places it is not possible, and the entire logic board must be replaced.

I purchased a MBP recently with a 1TB and that is plenty of space for the forseeable future, but just wanted to have an idea of my options. I could just look into external drives/cloud options, but replacing the internal with a larger capacity unit would be the simplest, although it might be the most expensive. TIA.

Anything after 2016 is soldered onto the logic board, non-upgradeable (Short of replacing the logic board). Even if you were prepared to pay for a new logic board with upgraded storage (at a vastly more expensive price than just what a standard PC compatible SSD would cost), the stores can only replace components like for like, e.g. if they fail.

My best advice would be to get what you think you'll need over the life of the machine at the time of purchase. External SSD's are a great option too, albeit an extra thing to carry.
