So I got myself an Imac Pro with the space grey keyboard and mouse, but I didn't buy the trackpad at the time, thinking that "Oh well I don't need it right now, I'll get it later sometime".

Sometime came, and now I'm looking at accessories and - turns out you can only buy the white one? Really, is that the case? Or can you buy the space grey if you have proof that you've bought an iMac Pro?

For now we can't purchase the accessories on their own. It's still unclear if an iMac Pro owner is able to order new accessories afterward. If you decide to contact Apple and ask them please let us know if it worked.
 
My understanding was that the answer to this question is no. I don't know if they will let you order a space grey accessory after the fact, but maybe because the purchase is still recent they will give you some wiggle room.
 
Well if you bought an iMac Pro, you could either contact the business representative that you likely are associated with, or talk with the sales person who sold it to you in the store.
I bought it from Microcenter. They are nice, but barely have a clue.
