Can you choose what to sync/share?

For example, can you set up iCloud to not sync photos with other devices, but sync your calendar, e-mail, etc..

I didn't set it up yet because I don't want to share everything.

You can share only contacts or calendars or other stuff. THe only thing you can't choose is to share only one calendar and not all.

Great, so you can pick and choose what to share? That's good. I can set it so that photos I take on my iphone won't show up on my ipad?

Just disable photostreaming and your device won't get/upload fotos.
