Can you install the desktop version of Snow Leopard on the 2010 mac mini server

yes, just make sure you use either the Mac Mini restore CD from a desktop version, or you buy a new up to date retail version (10.6.5).
You should be able to install an older version of Snow Leopard desktop on the Mini, but not everything will work, such as the ethernet port or SD card slot, even after you run software update. I also found my server mini had issues sleeping/staying asleep. I ended up getting a copy of the restore CD that came with the desktop minis and everything worked perfectly after installing.

i have considered this myself. when I got my mini, the server came with more HD space, more ram, and faster processor for less than you could upgrade the standard mini except for the superdrive.
i do not run anything from my administrator account, and instead have a "itunes" account to run my handbrake, eyetv, itunes, and mactheripper from. it seems that the server isnt utilizing all of its resources for the one account.

Yes you can. I did this just the other day to get Boot Camp support. I had the 10.6.3 Retail disk. That installed alright enough but lacked several drivers including ethernet. I downloaded this http://support.apple.com/kb/DL1324 and burn it to CD, then ran it. This updated just fine and updated all my drivers as well.

Also do you remove snow leopard server from the HD first and then install or install snow leopard on the spare HD first and then wipe the other HD .
I presume you can then use disc migrate in the normal way ?

Yes everything worked out great. I did a clean install - no migration.
here were only a few programs I wanted on it as I use it as a media server for my home network - not a full blown server - I also host my family web site on it.
