I am trying to create large documents on pages but it seems to only let me select A4 or letter sizes and nothing else. Is there a trick I am missing or is that it for now?

Can you set pages for iPad to do larger than A4?

The only way I've done larger if that's an option on my printer. Right now my options are 4x6 and 8x11 which what is in the printer trays. Not know what type of printer you are using...assuming that when you set the printer to what you want, the document in Pages will adjust to that.
