- I look at a particular contact on my iPhone and iPad and they have 6 phone numbers
- I look at the same contact in my iCloud account and they have 2 phone numbers
- I look at the same contact in Contacts on my MacBook Pro and they have 6 phone numbers
- I cannot edit the contact to remove some of the old phone numbers on my iPhone or iPad
- I can edit the contact to remove some of the old numbers on my MacBook Pro
- I have iCloud turned on

Does anyone know why this is happening or a solution that will allow me to edit contacts on my iPhone?
 
Seeing that iCloud is correct, you might want to try turning off iCloud Contacts on the phone. Say "Yes" to remove off phone. Then re-enable iCloud Contacts again.

If that works, repeat with the other devices.

This is good advice.

Also, make sure that in Settings > Contacts > Default Account that iCloud is selected.
