I just upgraded to iOS15 and now I can't change my home address. I removed the old address/obsolete emails/phone numbers and add the current information in contacts. As soon as I reopen my card, all the old information is back and all the new information is lost. Any ideas?
 
Did you tap the Done button after you made the edits? Contact changes I've made in both iOS 15 and iPadOS15 are saved, so not able to reproduce your issue unless the Done button was not tapped.
 
Yes, I press the done button and everything looks OK until I re-open the contact info. The screen is also flashing a few times as if it is refreshing something.
I just tested on my iPad (also on iOS15), there it works OK. The issue is on my iPhone 11 Pro Max.

I had an issue with Apple Pay several years ago when it constantly pulled my old address instead of the new address that I had enetered on my contact card. It turned out to be some corruption in Contacts with either the new device or the ios installation. Anyway to resolve it I just deleted the “My” card completely instead of changing the info. Then I created a new “me“ card with the new address and info and that fixed it.
