Should I get a 27' iMac with an i5 processor and 1 GB video card. or a 27' iMac with 512MB video card.

which is better to get. would 1gb video for gaming even though the i5 quadcore isnt as strong a processor as i7? or what is the best option.

based on what you said, and what you say you want to do, i'd get the i5 with the 1GB video card.

Wirelessly posted (Mozilla/5.0 (iPhone; U; CPU iPhone OS 4_1 like Mac OS X; en-us) AppleWebKit/532.9 (KHTML, like Gecko) Version/4.0.5 Mobile/8B117 Safari/6531.22.7)

The video memory will make little to no difference if the GPU itself is the bottleneck. A good example of this is the old nVidia FX 5200 with 256MB of ram I believe it was. People thought that because it had a ton of ram, it was a fast GPU. In reality, it was terribly slow.

That being said, large amounts of VRAM are ideal at the massive resolution the 27 inch runs at natively, so it certainly doesn't hurt. The i5 is plenty for today's games though. All depends on what you need
