Can't find Advanced option for Mail

New user, new iPhone 4S...

I am trying to find the Advanced option for my Hotmail account, but it is not there (can't find it for my Gmail account either). I want to be able to control if my emails get deleted from the server when I delete on my iPhone. I used the Hotmail account selection when adding my account (which I have been reading is new with iOS 5).

Are there any Advanced options with this type of account? Do I need to set it up as a Exchange account?
