I have an iPhone 6+ with PB3 installed. I installed the PB3 Watch profile, but can't get the Watch app to recognize there is an upgrade available.

I have deleted the profile, readded the profile, unpaired/repaired the watch, etc... and still no go.

Any ideas of what I am missing/doing wrong?

Apple has not made a watchOS 2 public beta available. Only for developers.

In case they ever do release a public beta for the watch.
You would think if they do have a public beta for watchOS then they would release the profile for it at that time (as they have done with iOS public betas). I guess it's possible that's what they did it for, but it seems rather odd (at least to me).
