I've tried everything to jailbreak my phone but I keep getting stuck on DFU. I've watched youtube videos read threads here but nothing is working.

When I go through to process itunes sits at a window that says "waiting for ipod". Then it gives me a message that "An ipod has been detected but could not be identified properly. Please disconnect and reconnect the ipod, then try again. An unknown error occurred (1601)."

The most recent failure was with quickpwn. I'm using itunes 8, iphone 3g 2.1.

Is there something else going on beyond me just not doing it right?

Try following these steps:

Open iTunes
Connect Phone to computer
Turn off Phone, leave it connected to computer
Bring up a clock on your screen that has seconds so you can time yourself
Hold Home + Power for exactly 10 seconds using the clock on your computer
Once you hit 10 seconds, release the power button but keep holding the Home button
Continue holding the Home button for another 10 seconds
The phone should now be in DFU and recognized by the computer and iTunes, ready for restore
(Note, the screen should be dark during this entire process. If not, start over)
 
I concur with the previous post, except that my phone is sometime finicky about going into DFU while it's connected via USB. If it's not working out for you, try omitting that step and connect it to the computer last.
