my parents have an old email account which is the email used for their apple ID. They no longer know the password to their old account. Is there anyway to sign out of an apple account (on an old iPad) without entering the password. Being locked out of an account makes apple products useless.......
any help is appreciated

You need to contact Apple support. It may take awhile to straighten out but it can be resolved. Apple will need to make sure the Apple ID that the password has been forgotten really does belong to your parents.

In the meantime they will not be able to sign out of that account on the iPad.

It would probably also help the OP to educate his parents on this kind of stuff. :)
Ideally, that would be the best route. However, if his older parents are anything like mine, where they ask for tech help and can't remember, don't listen, or want to argue tech etc., the OP is better served (if they allow) by being the sole tech support. He could even remote in to their Mac when needed.

Do you mean they no longer have access to that email account as well?
If you try to rest your password then usually they will use that email address for the reset so you need access to that.
Otherwise, if you want to change your password and if you are signed into icloud and if you know the passcode for the device and you have access to that email account you should be able to do it.
It's been a while but I did do something like this for my mother in law.
Usually, when you set it up you have to answer a couple of security questions like what was the name of your first pet etc. If you know or can guess the answers you can also usually reset the password (if it still works that way).
In any case, don't sign out, try to change the password or use the 'forgotten password' procedure and see how you get on. You should be able to bail out before anything permanent changes.
Otherwise, yes you need to ring support but they'll probably likely still ask you the security questions.
