I am trying to update my iPhone 13 Pro to iOS 15.0.1 via MacOS Finder. Download, backup etc. works fine, but when the update is to start, I get an error "The iPhone can't be updated, there was an unknown error(1)".

What is going on? This iPhone is brand new (picked it up today). I already tried restarting the iPhone and iMac, redownloading the update and a hard reboot of the iPhone.
 
Have you tried just updating the iPhone using the iOS interface (not through Finder)?

Settings > General > Software Update

That's how I do it, and my 13 Pro Max updated just fine yesterday.

Error 1 is a hardware error, however it doesn't mean there is actually defective or failed hardware with your iPhone or iMac. I think I remember it from back in the day.

-Is your iMac connected to the internet via a solid internet connection? Apples Installation Authorization Server is required to verify and sign the software.
-Try using restarting everything. iMac, iPhone, etc.
-Is your iMac on the latest MacOS software? (I could be wrong but I think there was a hardware compatibility update just recently).
-Make sure your iPhone is unlocked just prior to plugging it in.
-Make sure the iPhone sees the iMac as a trusted device.
-Make sure the lightning cable is high quality and designed for data transmission.
-Don't have any other USB accessories plugged in.
-Check for security software.
-I've had issues updating when using a VPN. Verification would fail.

If all that fails just use the iOS system software updater. I know some people feel downloading and installing the entire OS is better but it's just as likely the entire IPSW will have and issue as the OTA delta will. Consider this, iOS 7 jailbreak wouldn't work with the OTA update, it required the IPSW install to bypass the security features. Granted thats cherry picked but there isn't a real difference for the end user.

Is your mac updated? There's an "mobile devices" update from 2 days ago, and I think is to solve those errors

Have you restored data ?? It gave me exactly the same error and it didn't let me update from Macbook Finder either. Finally I put the iPhone in recovery mode, connected to the Macbook, then it will update you and the problem is over (all data will be lost)

Yes, shortly after I posted my question I tried an OTA update and it worked fine.

Maybe I am a bit old-fashioned as I do the firmware updates of all our devices (iPhones and iPads) via MacOS Finder.

Thank you. I already did a successful OTA update, but next time I will try your suggestions.

The strange thing is, updating via my iMac works fine for all our other iPhones and iPads, so I think the problem might be on the iPhone 13 Pro.

I did a migration from my old iPhone to the new iPhone 13 Pro. I already did a successful OTA update, but I could try recovery mode next time (on the other hand the advantage of iPhone to iPhone migration is that I kept all my data).
