I'd frequently view contacts, look up a location or possible even visit a web site in the background while on a phone call. However, the iPhone goes into a modal "phone call" mode and none of those things can be done. My old Motorola E815 could look up contacts during a phoine call. Grrrr...
 
Next time hit the home button while in a call - you can still access the phone contacts and other (non-EDGE related) features.

You're supposed to be able to do everything except internet and e-mail while on a phone call. When connected via Wi-Fi, you can even do those two as well.

Have you tried pressing the "Home" button while on a call?
