Haven't been able to send E-Mails with Mail.app on Mac OS X or iOS since yesterday. Works fine in the web client. Anyone have this problem? So frustrating!

there are countless threads on the subject. Scroll down and you'll see you're not alone.

Well, there are plenty. Here and in the IOS5 forum. You're not alone. No one has a solution.
