I know all about antenna gate in the past, but was wondering if anyone has had experience with thick cases blocking some of the signal? (or if i'm just going crazy)

It could just be coincidence, but i've used the same case basically on my last phone and new phone, but had a few "very careful" days of going caseless at my desk at work (where i typically get awful service). However, for those few days of waiting for my case I had pretty good service actually.

fast forward to getting my case and it seems slightly worse and cutting out here and there again.

Can this be a thing or just mostly coincidence?
 
Coincidence.

Cases do not block RF signals unless they are made of metal, ionized glass, or a metalized plastic material.

iPhones operate in the upper UHF / SHF frequencies and unless your body or body part (hand) blocks the antenna because of the case, you should not see any degradation by just the case.

Also the angle of the phone's plane to the cell tower may also cause reflection of the RF signal.

This is from a licensed FCC general radio operator & amateur radio licensed since 1982 who used the first cell phones ever - operator assisted Los Angeles / Western Radio half duplex phone patches on UHF.
