I have 2 macs, and I want to upgrade one to Big Sur for development reasons. The other I need to keep at Catalina. Does anyone know if this will give any issues with syncing iCloud stuff like Notes, bookmarks etc?

Do a Time Machine BU of the Catalina install. Migration Assistant once in Big Sur, it will use the TM BU to move what you want onto the fresh install. 😎

Sorry, maybe I wasn't clear. When I upgraded to Catalina, my High Sierra devices could no longer sync/use Notes because of the version mismatch, due to Catalina having new features. I can't see if this will be the same with Big Sur.

I don't have an answer but suggest that, in Apple Notes, you copy all the iCloud folders and notes into "On My Mac" folders. Do this on both Macs and you have copies of everything just in case.

I have no syncing issues between my Big Sur Macs and my Catalina hackintosh. I don't use notes but I just made a note on my M1 and it synced instantly to my Catalina. My Safari bookmarks are always synced between all my devices instantly as well.
