2020 iMac 27" 10-Core Intel Core i9
iMac20,2
Running Catalina Ver 10.15.7

Was considering finally upgrading to Big Sur since I assume it is very stable now. Any gotcha or issue I should be aware of being doing it?

I don’t think so. All I would say is things taking a little longer to load. I don’t think the CPU Cooler will make any noise. My 2019 iMac is on Big Sur and nothing is really happening.
Are you saying you are seeing slower response overall compared to Catalina?

If you use QuickTime player at all for imports or anything, then you may notice significantly worse performance. When I upgraded, I was unable to import videos with QuickTime due to my MacBook lagging and failing to upload so I eventually reverted back to Catalina.

Before moving to Big Sur, you can try to clone your current Catalina drive as backup. Once you have upgraded to Big Sur and encounter tech problems or some apps are sluggish or don’t work well, you can easily go back to Catalina. Having two OSs gives you time to compare.
