Hi,

Just wondering if anyone knows if it's possible to move from OS Catalina (which I'm currently running) to Big Sur running a MacBook Pro mid 2012, I'm reading about it but haven't got a definitive answer just yet.

It's not a definite no.

According to the OCLP page, everything is supported on that Macbook even with Monterey. While it's true that Apple doesn't provide any updates, using Opencore Legacy Patcher is quite a simple process and Big Sur or Monterey should run as good on that Macbook as Catalina.
