I changed my iCloud profile pic on my iPhone but I want to change back to the default of my initials.
Unfortunately it only gives me 2 options: edit pic or choose pic. How do I go back to my iPhone

Odd that they aren't providing the delete option on the device itself now that they are offering the other options.
I wouldn't know. I don't usually change my avatar except through my contacts and I've never left it blank. Consequently, I haven't been paying any attention to that.

But I happened to be in my Apple ID over the weekend and I changed it online. I recall seeing the option to delete it there, but I may be in error.
 
I suggesting doing this:
1. open https://www.icloud.com/#settings and aim cursor at your picture, click on the appeared minus button to remove the picture (as showed on the screenshot)

2. on your iOS devices enable internet connection, open Settings app and go to Apple ID profile settings -> iCloud -> turn on contacts sync toggle
3. on iOS open Contacts app (or Phone app -> Contacts tab) and pull down to refresh (or hit refresh button), wait a minute, open your main contact profile and you will see that your avatar have been successfully updated/removed. If not, try to open Contacts app, open your profile, delete picture from there, now update contacts list again.
4. on iOS reopen appleid profile settings and you will see that appleid's avatar also have been updated
