Does anyone know if it is possible to reassign the new keyboard shortcuts on the M1 MacBook Air. For example the do not disturb key can I reassign that to say open launchpad. If not possible in Big Sur is there any third party application. Thanks for your help.

Yes. You can do that. Mac keyboard shortcuts like Do Not Disturb are reassignable in System Preferences > Keyboard > Shortcuts.

It seems you can only change if modifier keys are used or am I missing something. Thanks.

You can map function keys without modifiers. But just about any other key would require a modifier, by necessity.
