There is a way to change it to Helvetica by temporarily changing keyboard to international. Didn't try but read about it on Mashable.
 
Basically enable the Chinese or Japanese keyboard, enter some text with that keyboard, then switch back to the English keyboard. The font will change to Helvetica in that one note.

I now have three keyboards.. UK English for the correct spelling :) US English for an easily accessed $ rather than the £ and now Japanese to get rid of that Marker Felt font which I dislike about as much as Comic Sans.... :eek:
 
If your note is composed on your Mac and synced to your iPad it retains the original font, including its size and colour. Any further edits made to the note will be made in the same font.
