iPhone Changing individual icons

There isn't a tweak for this, but you can use ifile to go into the file system of the theme. In there you should be able to delete/rename the icons you do not want to use.
I havent done it in a while, so I'm not exactly sure where the theme directory is.

It is /Library/Themes

You can make a .theme folder in that place and then copy what you want over to your new folder.
I guess I'm trying to avoid having to install Winterboard, to keep the device running spiffy
Var/mobile/containers/bundle/applications - You can do it manually without winterboard but it's extensive work and when the app gets a update it changes it back to stock icon...
You mean change the icon in the app folder, it is much safer and easier to use WinterBoard for it.
Yep I totally agree but the OP was asking "without Winterboard"
I've never had Winterboard slow down my device with themes unless you're running animated html lock screens or something.

Just did, then the iOS 8 jailbreak went stable and then I've been getting tweaks and WinterBoard all good.
