When I type an email, the header at the top shows my name with a flower in a circle next to my name. I don't really want all my emails going out with a flower next to my name. When I go into gmail settings, my icon is my first initial. How do I get something like that instead of the flower?

Try System Settings -> Apple ID. Put the cursor on your user pic and an Edit tab should appear at the bottom of the pic. Click on that then select Monogram.

The emails shouldn't go out with the picture anyway, but you can switch off the display of the user pic in Mail by selecting View -> Hide Contact Photo
