Hi - I'm still relatively new to the Mac platform, so pls forgive my question.

I would like to change the icon for a specific (i.e. not all) PDFs - so I can put in my Dock and know what it is.

If this is possible, how would I do this please?

Try this: right-click (or Cmd-click) and choose "Get Info."

Open the icon you'd like to use and copy it to the clipboard.

In the "Get Info" window for your PDF file, click to highlight the icon next to the file name and Paste the new icon.
 
Thanks - but this seems to replace of the original PDF icon file with the generic .ICO icon itself - rather than the preview of the icon file

you need to add it to the dock AFTER changing the icon. so, remove it from the dock and add it again, and you'll see the new icon.
and make sure you've copied the icon you want into the clipboard before pasting it onto the PDF! sounds like you may not have done that, judging from your comment about getting a generic .ico.
