iPod charging and playing

Yep. As long as its not in iTunes it will be able to play and charge.

and how do i eject it from iTunes?

click on the small arrow on the right of your iPod's name:

Or you could plug it into a wall outlet. This would require another piece of hardware, however: a wall charger.
