The Apple SSD option at $500.00 is as cheap or cheaper than if you were to buy it not from Apple at 256GB size.
You don't need a 256GB SSD - I've been using a FW800 80GB Intel X25m with my 2009 i7 iMac for over a year, and it's not even half-full. I use it only for the OS and Applications, with my user folder on the internal drive, and it works great - noticeably faster and more responsive than booting from the internal drive.
You can buy a decent 64GB SSD, put it in a FW800 enclosure, and save $300-400US. You won't get the Z68 caching features (assuming Apple is going to implement them), but for OS/Apps usage, FW800 works fine.

I've had great luck with my Other World Computing drive. Especially with the most recent firmware update that fixed the issues with freezing upon wake. The company makes their drives themselves, and have terrific support. Here is a link to their website. I too hated the idea of installing the drive. I had it done by a local Apple Reseller who is also a certified repair center. That might be your best bet. I was charged $35 for the install.
with my MBP im getting by with a 60GB SSD by OCZ (VERTEX 2) and the HD moved to the optical drive bay. Pushing the limit as far as free space goes (I have moved non-everyday applications to the HD) and like to have ~10GB Free if possible.
