Have you reported the issue to Google? You didn't mention any action or troubleshooting steps you might have taken.

I am disabled with carpal tunnel and cervical kyphosis because of my iPhone use. I was hoping someone healthier would be proactive and solve the freezing issue.

For info i've been on various Public Beta's of iOS14 and not had an issue with Chrome on any of them. I'd look at reinstalling Chrome as a starting point or rebooting the phone if you havent as yet.
