Hi, I have a Mac Pro 5.1 with 4 GB ATI Radeon 580x video card and of course I don't have the boot screen.
How can I proceed to do a clean installation of Mojave?
Is it possible to see the USB stick with the system under "Startup Disk" ??
 
No, you will need to erase your boot disk, first, so you have to use two disks with macOS. Then you remove the second bootable disk and keep just the erased one, after you don't have a bootable drive, your macPro will boot from the createinstallmedia USB drive.

You can do a clean install with two disks too, from macOS, just select the empty one when you open the macOS installer.
