for clock speed click the little blue apple in the top left then about this mac. for the fps it might varry from game to game but try ctrl-r or apple-r or command-r. one of these work for world of warcraft.
no, i mean how to measure the computer's speed while performing tasks. i hears about people saying that after they did their firmware update theey could only push the computer to about 1GHz. how did they know that exact number? i thought i remember them mentioning something about an application that tells you the exact frequency that the machine is performing at...

That doesn't appear to make sense, and I don't mean that as an insult or anything.
Under energy saver preferences on older models, you can set your computer to low speed to save power, high speed, or auto. Auto will push the CPU at full speed as it's needed.
Try going into your applications folder, then utilities and running Activity Monitor. Some good processor/memory usage in that app.
Games all have different means of showing you the frames-per-second your system is achieving, you'd have to look it up in per-game.
