I have a flashed 5,1 early '09 Mac Pro which is currently running High Sierra AOK. I have been getting prompts to update the os to Mojave. My current graphics card supports metal. Will Mojave work on my machine and will the original graphics card work at all with Mojave?

Metal support is not equal to Mojave support. No NVIDIA GPU after Kepler (GTX 9xx, GTX 10xx, RTX 20xx) work with Mojave.

Read the first post of the thread MP5,1: What you have to do to upgrade to Mojave to know what you have to do to upgrade and the GPU supported list.

Difficult to answer this without more info.

Will show screen unacellerated, but will not "work" and will mess with the main GPU.

Yep, as @tsialex said just because the card is Metal does not mean you can run Mojave on it.

I don't see my graphics card listed anywhere as Mojave-compatible, but some lower AMD Radeon cards are. It's an AMD Radeon HD 8970. If I can't confirm it will work I won't go with Mojave.

HD 8970 = HD7970 = R9 280X, should work with Mojave.
