More than 2 versions indeed. The good old "two" with the Part# 113-4E3531U or 113-4E353BU. All other part numbers are the "new" one. But I am not sure if this number can be seen on the box (e.g. at the barcode label). You may ask the shop staff, most likely their computer can show the exact part number of their goods.

I ran to Sham Shui Po about 2 months ago. The PULSE was available. And plenty of Nitro+.
Even I didn't own this card, but I am quite sure the VBIOS can easily be "
fixed" (change the part number), and make MacOS recognise it properly. I believe the Nitro+ can also do that, but since the Nitro+ is a 2.2 slot card (effectively occupy 3 slots), and require more power. I still believe PULSE is a better choice for cMP.

h9826790, was curious if you had experience with Premiere Pro? Would you recommend the 580 still or the 1080ti in High Sierra? I am in the same situation as the OP with the same system but use Premiere Pro.

In fact, I am trying to switch to Premiere Pro, but only have very little experience so far. I am still working hard to get use to the new UI. So, I can't quite do the same thing yet as I can in FCPX, a bit hard to compare. So far, my feeling is that Premiere Pro is very smooth with my current setup (as per my signature). However, I also doubt if the 1080Ti can work better than RX580 in Premiere Pro (MacOS). My understanding is that the GPU is just there to provide OpenCL support (of course CUDA and METAL is also there, but may have more glitches than benefit. At the end, it's still the Mercury Engine, OpenCL is still the most reliable options so far). The GPU's hardware video engines are disabled in MacOS. So, the 1080Ti's real power can't be used.
But if you are pure Premiere Pro user, no FCPX, no other OpenCL apps. Then I will say better go for the Nvidia card (unless you often need to use recovery partition, then RX580 obviously is the better choice).
1) better power efficient
2) better raw power (future driver / software may able to release those power)
3) you can switch to Windows at anytime, then the 1080Ti's real power will be release instantaneously.
My own experience with the 1080Ti is very positive. Even the OS update is easier than I expect. As long as do it right, I don't even need any other GPU, Mac EFI, remote control, etc to help. Just update (via terminal), install new driver (with some text edit to make the installer work), and reboot.
