I have two OS installed:
- Mojave latest version - SSD on slot 1 Internal
- OpenCore Catalina latest version - NVMe on Syba

Is there a way to encrypt the disks, without reinstalling the OS?

OpenCore will allow you to use FileVault. With basic SMBIOS spoofing (as in the configuration for hardware acceleration), you'll be able to enable FileVault in System Preferences > Security & Privacy, and with OC's bootscreen support, you'll be able to enter your password during login.
