I'm just curious whether it's normal/expected to have coconut battery showing a substantially improved battery health with increased cycles? I own an M1 Pro MBP 2021 14" which has been great though admittedly I don't use it all the time as I have two macs. Apple battery health shows 92%, coconut battery shows 98% (previously down to 88%).

If you want your battery reading to be really meaningful, you need to calibrate it once in a while. Looking at number of yoru cycles, it may have not been done. There are descriptions how to do that on line, but basically you fully charge, use the battery down to 20% or so and charge again, with some details which make it more reliable. After that this reading will make more sense as computer will understand the battery behavior better. Even then this is estimate only.
