I have been looking for a decent code snippet app for macOS for a while. Simple is better. For now I have bene using Dash snippets and works well enough.

Simple requirements.

Snippets listed by language type
Option to have an organisation for snippets
Simple variable replacement - very simple and ideal to be able to cycle or prompt for variables
Integration with editors via hot key or trigger sequence e.g. %%snip

Tried various and cannot find anything I like.

So it may not be exactly what you're looking for, but it may work well for you regardless, just a tad differently to how you may envision it now, but I suggest giving it a go;
Snippety - available on the App Store I believe.
It can be triggered a bit like Spotlight, so can easily be put in anywhere. For example, you might hit cmd+shift+space to trigger the search (pops up like Spotlight) then write "cl" - Enter. Now you've just pasted a Java class (or whatever class snippet is at the top of your list)
 
That does indeed work very well. I have installed and evaluating and like what I see. Simple and does what I want. I don't see need for much else.
I also found Rocket Typist and as I was already using Network Radar from same guy I thought I would try it also.
Like what I see there too. Between these I think it has scratched the itch!

Now on to find another of my desirables .... a decent notebook app. Something like a lab notebook that works on filesystem, ideally Markdown and stays out of the way. I have tried many notes apps and not yet settled so still working on just my own Markdown files and an editor with a file pane. Trying a few.

I use Lepton - it uses gists stored on GitHub and Alfred has a terrific workflow for it.

I used to use Joplin but have now gone to Obsidian.

Glad it served your needs. - Have no good recommendation for notes. I just use the built in Notes app and Nano, haha
