I would prefer that Lion at least give us the option of customizing these. I've been able to restore color icons in iTunes by replacing the iTunes.rsrc file, but as far as I know no one has had any success restoring color icons in the Finder sidebar. Surely there will be a solution once the final version has been released!
I thought Launchpad was ridiculous when they first demo'd it last October. I'm a Spotlight guy and it just looked like needless eye-candy. I hated how Apple touted it as a tentpole feature right up into WWDC. Then I downloaded the GM. I was wrong. Launchpad is not terrible. It is more convenient than a stack ... and more user-friendly than Spotlight when your brain stops working for a sec and you just can't recall the name of the app you're looking for.
Also, I only know three Mac users in my daily life. None of them even know the Applications folder exists. One has found spotlight and uses it only to launch iPhoto, I think the only app they ever use that isn't in their dock. They all use a stack for applications not in their dock. Two of them I have caught launching an application from their downloads folder or opening a dog every time they want to use an app. For them, Launchpad will make sense.
I also like the greyscale Finder icons. I think it looks way classier than the colour icons, which I always felt looked kinda gaudy. The colours just didn't play well together. But that's just me.
