configure different Ultras with one/the same iPhone

is it possible to customize multiple Apple Watches with one iPhone, or does every Apple Watch need a dedicated iPhone?

You can have multiple watches paired with the phone, but you can only use one watch at a time.

Yes. I am currently using my Ultra and my S4 with my phone but as said above only one watch at a time and only one watch can be set up with cellular. With that being said I haven't picked up my S4 since I got the Ultra.
